1. Never use abrasive or caustic cleaners like cleanser. Try adding a little baking soda while heating water to remove stubborn residue or stains.
2. Don’t use metal scouring pads or scrubbers on fine finishes. It leaves microscopic scratches that cause food to stick. Use nylon if you must scrub.
3. Season steel cast aluminum and cast iron. At high temperatures, oil or shortening carbonizes in the pores of the metal cookware and prevents the food from burning and anchoring them to the pan.
4. Don’t crank up the heat with non stick pans. It will severely shorten its life. Season non stick aluminum pans as well: this will insure that your cookware will stay in good form.
5. Gently and briefly pre-heat cookware. Pre-heating before adding shortening will help prevent food from sticking.
6. Use the right materials in cooking. Abrasions occur in stirring or frying so use metal spoons for stainless and nylon, wood and silicon spoons or nonstick.
7. Never store acidic foods in pans. All metals react with acids: its only a matter of time before you will notice it.
8. Avoid white spots. Minerals in the water cause white spots to appear on your non-stick
surface, try wiping the surface with white vinegar or lemon juice.
